  • 2 celery stalks, chopped into 1/4 in. pieces
  • 1 green onion, chopped thin
  • 5-6 large strawberries, diced
  • c chopped pecans
  • ¼ c mayonnaise
  • 2 T Greek yogurt, plain
  • 1 tsp dijon mustard
  • 1 tsp lemon juice
  • 1 T poppy seeds
  • ½ tsp pepper
  • salt to taste

Instructions

  1. Prepare all ingredients by dicing strawberries and chopping celery and green onion.
  2. In a mixing bowl, combine shredded chicken, chopped celery, green onion, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, poppy seeds, pepper, and salt. Mix well.
  3. Gently fold in diced strawberries or add them just before serving to maintain freshness.
