  • 1 tbsp instant dry yeast
  • 4 ¼ cups all-purpose flour
  • ⅓ cup granulated sugar (for dough)
  • 1 large egg
  • ⅓ cup unsalted butter (softened for dough)
  • 1 ¾ cups fresh or frozen strawberries
  • ¼ cup granulated sugar (for filling)
  • Juice of half a lemon
  • ½ cup cream cheese (softened, for glaze)
  • 3 tbsp unsalted butter (softened, for glaze)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp strawberry puree (from filling)

Instructions

  1. Prepare the strawberry filling by cooking strawberries with lemon juice and sugar until thickened. Blend until smooth and cool.
  2. For the dough, mix flour, sugar, salt, and yeast in a stand mixer. Add warm milk, butter, and egg; knead until smooth. Let rise until doubled.
  3. Roll out the dough into a rectangle. Spread cooled strawberry filling evenly over it and roll tightly into a log.
  4. Cut into 12 rolls and place in a greased baking dish. Let rise again until puffy.
  5. Bake at 350°F for about 20-25 minutes until golden brown.
  6. For the glaze, beat cream cheese, butter, powdered sugar, vanilla extract, and cold strawberry puree together until smooth.
  7. Drizzle glaze over warm rolls before serving.
