- 1 cup jasmine rice
- 2 cups low-sodium chicken broth
- 1 lb shrimp (peeled and deveined)
- 8 oz beef sausage (sliced)
- 1 cup bell peppers (chopped)
- 1 medium yellow onion (chopped)
- 3 cloves garlic (minced)
- 2 tsp Cajun seasoning
Instructions
- Preheat a large skillet over medium heat and add olive oil.
- Sauté chopped onions and bell peppers for about 5 minutes until soft; add minced garlic and sliced beef sausage, cooking until browned.
- Stir in jasmine rice and Cajun seasoning, cooking for an additional minute.
- Pour in chicken broth and bring to a boil; reduce heat, cover, and simmer for 15 minutes until rice is tender.
- Gently fold in shrimp, cover again, and cook for an additional 5–7 minutes until shrimp are pink.
- Allow the dish to rest for 5 minutes before fluffing with a fork.
