  • 1/4 cup salted caramel topping
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 16 oz cream cheese
  • 1/2 cup salted butter
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, beat eggs and brown sugar until fluffy. Mix in vegetable oil, pumpkin puree, and salted caramel.
  3. In another bowl, whisk together flour, baking powder, baking soda, and pumpkin pie spice. Gradually incorporate dry ingredients into the wet mixture.
  4. Pour batter into a greased 9×13 inch pan and bake for about 36 minutes or until a toothpick comes out clean.
  5. Allow cake to cool completely before frosting.
  6. For frosting, beat cream cheese and butter until smooth; add vanilla and powdered sugar gradually until blended.
  7. Spread frosting over cooled cake and drizzle with remaining salted caramel topping.
