  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese
  • 1 1/2 cups sugar
  • 4 large eggs
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • 2 (1 oz) bottles red food coloring

Instructions

  1. Preheat your oven to 325°F.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until creamy. Add eggs one at a time, mixing well after each addition. Stir in cocoa powder, sour cream, buttermilk, vanilla extract, white vinegar, and red food coloring until combined.
  4. Pour the batter into the prepared crust and bake for 10 minutes at 325°F. Reduce temperature to 300°F and bake for an additional hour and 15 minutes until set.
  5. Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.
  6. For frosting: Beat cream cheese and butter until smooth; add powdered sugar and vanilla extract. Spread over cooled cheesecake.
