  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring
  • 1 pie crust, packaged or from scratch
  • 2 ounces (56g) cream cheese, softened
  • ½ cup (50g) granulated sugar
  • ½ teaspoon vanilla
  • ½ cup (118ml) cold heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C). Unroll the pie crust into a 9-inch pie plate and chill.
  2. Cream together softened butter and brown sugar until crumbly. Mix in eggs one at a time, followed by vanilla extract, baking powder, and cocoa powder until smooth.
  3. Gradually add flour until combined. Stir in white vinegar and red food coloring until fully mixed.
  4. Pour brownie batter into the chilled pie crust. Place on a cookie sheet and bake for 50-60 minutes or until puffed.
  5. Let cool before topping with cream cheese whipped cream made by mixing cream cheese with sugar and vanilla, then folding in whipped cream until stiff peaks form.
