- 1 cup Greek-style plain whole milk yogurt or coconut yogurt
- 3-4 tablespoons plant-based gelling agent
- 2 tablespoons raw honey or pure maple syrup
- 1 to 1 1/2 cups fresh blueberries
Instructions
- In a mixing bowl, combine the Greek yogurt (or coconut yogurt), plant-based gelling agent, and honey (or maple syrup). Mix until smooth.
- Gently fold in the fresh blueberries until evenly distributed.
- Spoon the mixture into silicone molds or ice cube trays, packing it slightly to eliminate air pockets.
- Freeze for about 60 minutes until solid.
- Pop the bites out of the molds and store any leftovers in a freezer-safe container.
