Ingredients
- 4 cups Mixed Salad Greens
- 1 cup Pomegranate Seeds
- 1/2 cup Toasted Pecans
- 1/2 cup Feta Cheese
- 1/4 cup Red Onion
- 1 medium Apple (thinly sliced)
- 1/3 cup Extra-Virgin Olive Oil
- 1/4 cup Balsamic Vinegar
- 2 tablespoons Honey or Maple Syrup
- 1 tablespoon Dijon Mustard
- Salt & Pepper to taste
Instructions
- In a large salad bowl, combine mixed salad greens and sliced apple.
- Sprinkle pomegranate seeds and toasted pecans on top.
- Crumble feta cheese over the salad.
- In a separate bowl, whisk together olive oil, balsamic vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until emulsified.
- Drizzle the vinaigrette over the salad just before serving and toss gently.
