  • 2 cups cooked jasmine rice
  • 1 cup diced chicken breast
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup diced bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add diced chicken breast and cook until no longer pink; remove from skillet.
  2. In the same skillet, sauté minced garlic until fragrant. Add diced carrots, peas, and bell peppers; cook until tender.
  3. Push vegetables to one side of the skillet and add cooked jasmine rice to the other side. Stir together with vegetables.
  4. Add diced pineapple and stir-fry everything until well combined.
  5. Mix soy sauce into the fried rice, season with salt and pepper to taste.
  6. Incorporate cooked chicken back into the mixture; heat through for a couple of minutes before serving.
