Ingredients
- 2 cups cooked jasmine rice
- 1 cup diced chicken breast
- 1 cup diced pineapple
- 1/2 cup diced carrots
- 1/2 cup peas
- 1/2 cup diced bell peppers
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add diced chicken breast and cook until no longer pink; remove from skillet.
- In the same skillet, sauté minced garlic until fragrant. Add diced carrots, peas, and bell peppers; cook until tender.
- Push vegetables to one side of the skillet and add cooked jasmine rice to the other side. Stir together with vegetables.
- Add diced pineapple and stir-fry everything until well combined.
- Mix soy sauce into the fried rice, season with salt and pepper to taste.
- Incorporate cooked chicken back into the mixture; heat through for a couple of minutes before serving.
