  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Garnish: green onions, sesame seeds

Instructions

  1. Gather all ingredients and prepare by cubing chicken and pineapple and chopping vegetables.
  2. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown; remove from the skillet.
  3. In the same skillet, sauté onion, garlic, and bell pepper until softened.
  4. Add the pineapple and cook for about 2 minutes.
  5. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
  6. Reduce heat to low, cover skillet, and simmer for 18–20 minutes until rice is cooked.
  7. Return cooked chicken to the skillet; mix well and heat through before serving.
  8. Garnish with sliced green onions and sesame seeds.
