- 1 pound chicken breast, cubed
- 1 cup pineapple, cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Garnish: green onions, sesame seeds
Instructions
- Gather all ingredients and prepare by cubing chicken and pineapple and chopping vegetables.
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown; remove from the skillet.
- In the same skillet, sauté onion, garlic, and bell pepper until softened.
- Add the pineapple and cook for about 2 minutes.
- Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
- Reduce heat to low, cover skillet, and simmer for 18–20 minutes until rice is cooked.
- Return cooked chicken to the skillet; mix well and heat through before serving.
- Garnish with sliced green onions and sesame seeds.
