- 1 3/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar (packed)
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 1/2 cups mashed bananas (about 3 or 4 medium)
- 1/2 to 2/3 cups chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat softened butter with brown sugar and peanut butter until fluffy. Add eggs one at a time and mix well; then incorporate vanilla.
- Gradually add the dry mixture and sour cream alternately until just combined.
- Fold in the mashed bananas and optional nuts.
- Pour batter into the prepared pan and bake for about 50 to 55 minutes until golden brown and a toothpick comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack.
