  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed bananas (about 3 or 4 medium)
  • 1/2 to 2/3 cups chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat softened butter with brown sugar and peanut butter until fluffy. Add eggs one at a time and mix well; then incorporate vanilla.
  4. Gradually add the dry mixture and sour cream alternately until just combined.
  5. Fold in the mashed bananas and optional nuts.
  6. Pour batter into the prepared pan and bake for about 50 to 55 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the pan for about 10 minutes before transferring to a wire rack.
