Ingredients
- 1 ½ lbs sirloin or ribeye steak, cut into cubes
- 12 oz cheese tortellini, fresh or refrigerated
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp Cajun seasoning
- Juice of 1 lemon
- ½ cup grated Parmesan cheese
- Fresh parsley and chives, for garnish
Instructions
- Cook the tortellini in salted boiling water until tender; reserve ½ cup pasta water before draining.
- Season steak bites with Cajun seasoning and sear in olive oil until browned; set aside.
- In the same skillet, melt butter and sauté minced garlic until fragrant. Add lemon juice and herbs.
- Combine tortellini and steak with the cowboy butter sauce; add reserved pasta water for desired consistency and stir in Parmesan cheese until melted.
- Serve hot, garnished with additional herbs and Parmesan.
