  • 1.5 cups cooked boneless skinless chicken breast
  • 1/4 cup reduced fat feta cheese
  • 1/4 cup celery, diced
  • 1/4 cup Persian cucumbers, diced
  • 1/4 cup roasted red peppers, diced (drained and dried)
  • 1/4 cup black olives, diced
  • 2 tbsp red onions, diced
  • 1/4 cup nonfat Greek yogurt
  • 3 tbsp reduced fat mayonnaise
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1/2 tbsp lemon juice
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp celery seed

Instructions

  1. Prepare the dressing by mixing Greek yogurt, mayonnaise, dill, parsley, lemon juice, onion powder, salt, pepper, and celery seeds in a bowl until smooth.
  2. Stir in the cooked chicken and feta cheese followed by diced celery, cucumbers, roasted red peppers, olives, and red onions. Mix gently until combined.
  3. Chill the salad for at least an hour before serving to enhance flavors.
