Ingredients
- 2 cups cooked shredded chicken
- 1 Tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 4 cups organic chicken stock
- 1 (16 oz.) package potato gnocchi
- 1 cup chopped organic kale
- 3 Tbsps all-purpose flour
- 1 ½ Tbsps Tuscan Marry Me blend
- 1 ½ cups heavy cream
- Freshly grated parmesan cheese
Instructions
- In a heavy-bottom pot over medium heat, melt olive oil and butter. Sauté minced garlic until fragrant.
- Add chicken stock, sea salt, sundried tomatoes, and tomato paste. Bring to a gentle simmer.
- Gradually stir in flour until the mixture thickens slightly; cook for about 2 minutes.
- Add shredded chicken and gnocchi; simmer for about 5 minutes until gnocchi are tender.
- Reduce heat to low; slowly mix in heavy cream, apple vinegar (or stock), lemon juice, and Tuscan blend.
- Fold in chopped kale; cook until heated through. Optionally add fresh tomatoes before serving.
- Ladle into bowls and top with freshly grated parmesan.
