Ingredients

  • 2 cups cooked shredded chicken
  • 1 Tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 4 cups organic chicken stock
  • 1 (16 oz.) package potato gnocchi
  • 1 cup chopped organic kale
  • 3 Tbsps all-purpose flour
  • 1 ½ Tbsps Tuscan Marry Me blend
  • 1 ½ cups heavy cream
  • Freshly grated parmesan cheese

Instructions

  1. In a heavy-bottom pot over medium heat, melt olive oil and butter. Sauté minced garlic until fragrant.
  2. Add chicken stock, sea salt, sundried tomatoes, and tomato paste. Bring to a gentle simmer.
  3. Gradually stir in flour until the mixture thickens slightly; cook for about 2 minutes.
  4. Add shredded chicken and gnocchi; simmer for about 5 minutes until gnocchi are tender.
  5. Reduce heat to low; slowly mix in heavy cream, apple vinegar (or stock), lemon juice, and Tuscan blend.
  6. Fold in chopped kale; cook until heated through. Optionally add fresh tomatoes before serving.
  7. Ladle into bowls and top with freshly grated parmesan.
