This tropical chia pudding is a vibrant, naturally sweet layered treat made with creamy coconut milk, fresh mango, and pink dragon fruit. It’s rich in fiber, lightly sweetened with maple syrup, and topped with coconut yogurt for a refreshing breakfast, snack, or healthy dessert. The layered presentation makes it as beautiful as it is nourishing.

Ingredients

For the chia pudding base
350 ml milk of choice (coconut recommended)
1 ½ tbsp maple syrup
½ tsp vanilla extract
65 g chia seeds (about 6 tbsp)

For the fruit layers
½ pink dragon fruit, blended
1 large Alfonso mango, blended or mashed

For topping
Vanilla coconut yogurt, as desired

Instructions

  • In a medium bowl or jar, whisk together the milk, maple syrup, and vanilla until well combined.

  • Add the chia seeds and whisk thoroughly to prevent clumping. Let the mixture sit for 5 minutes, then whisk again.
  • Cover and refrigerate for at least 4 hours or overnight, until thick and pudding-like.
  • Prepare the fruit layers by blending the dragon fruit until smooth. Blend or mash the mango separately until creamy.
  • Once the chia pudding has set, stir it well. If it is too thick, add a small splash of milk and mix.
  • Assemble the layers in serving glasses: start with a layer of chia pudding, add a layer of mango, then another layer of chia pudding, followed by the dragon fruit.
  • Top with a generous spoonful of vanilla coconut yogurt.

  • Serve immediately, or chill briefly before serving for a firmer layered texture.
