- 1–2 finely diced jalapeños (seeded for milder heat)
- ½ cup all-purpose flour
- 2 beaten eggs
- 1½ cups seasoned breadcrumbs
- Oil for frying
Instructions
- Slice the onions into ½-inch rings, separating the sturdy layers.
- In a mixing bowl, combine cream cheese, cheddar, jalapeños, and optional add-ins; chill for 10 minutes.
- Fill each onion ring with the mixture, smoothing the edges.
- Freeze filled rings for 20–30 minutes until firm.
- Dredge each ring in flour, then beaten eggs, followed by breadcrumbs (double coating optional).
- Heat oil to 350°F (175°C) and fry rings in batches for 2–3 minutes per side until golden brown.
- Drain excess oil on paper towels and serve hot.
