- 2 cups fresh spinach, finely chopped
- 1 cup feta cheese, crumbled
- 1/2 cup almond flour
- 1 large egg
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine 2 cups finely chopped fresh spinach, 1 cup crumbled feta cheese, 1/2 cup almond flour, 1 large egg, 1 tablespoon olive oil, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well until combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly into discs.
- Bake for 15-18 minutes until golden brown and crispy.
- Allow to cool for about 5 minutes before serving.
