  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a large bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter with brown and white sugar. Mix in cinnamon, eggs, vanilla, and mashed bananas until blended.
  4. Combine wet and dry mixtures gently until just combined.
  5. Pour batter into a greased pan placed on a trivet inside the Instant Pot with 1 cup of water. Cover with foil.
  6. Seal the lid and cook on manual mode for 50 minutes; perform quick release when done.
  7. Carefully remove and cool on a rack before slicing.
