- 1 cup chopped fruit (choose your favorites)
- 1 cup green grapes
- 1 cup diced strawberries
- 1 cup chopped peaches
- 1 cup blueberries
- ¼ cup chopped vegetables (like spinach, beets, carrots, or zucchini)
- ¼ to ½ cup pure apple juice (no added sugar)
- 2 tablespoons raw honey
- ¼ teaspoon pure vanilla extract
- 3 tablespoons plant-based gelling agent (like agar-agar)
Instructions
- Prepare your molds by lightly greasing them or lining an 8×8” dish with wax paper.
- In a high-powered blender, combine the chopped fruits, vegetables, and apple juice. Blend until smooth, adding more juice if necessary.
- Add raw honey and vanilla extract; blend until combined. Adjust sweetness if desired.
- Transfer to a saucepan and whisk in the vegan gelling agent over medium heat until dissolved—do not boil.
- Fill molds with the mixture and chill in the refrigerator for at least two hours until set.
- Once set, remove from molds and enjoy your homemade fruit snacks!
