  • 1 cup green grapes
  • 1 cup diced strawberries
  • 1 cup chopped peaches
  • 1 cup blueberries
  • ¼ cup chopped vegetables (like spinach, beets, carrots, or zucchini)
  • ¼ to ½ cup pure apple juice (no added sugar)
  • 2 tablespoons raw honey
  • ¼ teaspoon pure vanilla extract
  • 3 tablespoons plant-based gelling agent (like agar-agar)

Instructions

  1. Prepare your molds by lightly greasing them or lining an 8×8” dish with wax paper.
  2. In a high-powered blender, combine the chopped fruits, vegetables, and apple juice. Blend until smooth, adding more juice if necessary.
  3. Add raw honey and vanilla extract; blend until combined. Adjust sweetness if desired.
  4. Transfer to a saucepan and whisk in the vegan gelling agent over medium heat until dissolved—do not boil.
  5. Fill molds with the mixture and chill in the refrigerator for at least two hours until set.
  6. Once set, remove from molds and enjoy your homemade fruit snacks!
