  6. Roll out chilled dough into a rectangle; place the butter block in the center and fold over to seal.
  7. Roll out again into a rectangle and fold like a letter; repeat chilling and folding two more times.
  8. Shape the dough into triangles and roll from base to tip to form croissants.
  9. Let rise on a baking sheet for about 1 hour until puffy.
  10. Preheat oven to 400°F (200°C). Brush with egg wash before baking for 15-20 minutes until golden brown.
