Instructions
- Slice the fresh pineapple into rings and pat dry with paper towels.
- In a mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon; whisk until mixed.
- In another bowl, whisk the egg and milk together. Gradually add to dry ingredients and stir until just combined.
- Heat vegetable oil in a frying pan over medium heat until hot.
- Dip each pineapple ring into the batter and carefully place in hot oil.
- Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove fritters using a slotted spoon and drain on paper towels; sprinkle with cinnamon sugar.
