Ingredients
- 2 large eggs
- ½ cup pumpkin puree
- ⅓ cup pure maple syrup
- ¼ cup coconut sugar
- ½ cup melted coconut oil
- ⅔ cup oat flour
- ¾ cup rolled oats
- 1 tbsp pumpkin pie spice
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
- In a mixing bowl, whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
- In another bowl, combine oat flour, rolled oats, pumpkin pie spice, and baking soda. Mix well.
- Gradually add the dry ingredients to the wet mixture until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared pan and bake for 24–26 minutes or until a toothpick comes out clean.
- Allow to cool for at least 10 minutes before slicing into bars.
