- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 cups chicken broth
- 2 cups diced tomatoes (fresh or canned)
- 1 can (4 oz) diced green chilies
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- salt and pepper to taste
- 1 cup chopped fresh cilantro for garnish
- lime wedges for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté the chopped onion for about 3-4 minutes until translucent; add minced garlic and cook for another minute.
- Add chicken pieces, season with salt and pepper, and cook until browned (about 5-7 minutes).
- Pour in chicken broth; add diced tomatoes, green chilies, corn, cumin, oregano, and paprika. Stir well.
- Bring to a boil; reduce heat to low and cover. Simmer for 30 minutes until chicken is tender.
- Adjust seasoning as desired; simmer uncovered for an additional 5-10 minutes if thicker stew is preferred.
- Serve hot garnished with fresh cilantro and lime wedges.
