  • 1 can (4 oz) diced green chilies
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt and pepper to taste
  • 1 cup chopped fresh cilantro for garnish
  • lime wedges for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté the chopped onion for about 3-4 minutes until translucent; add minced garlic and cook for another minute.
  3. Add chicken pieces, season with salt and pepper, and cook until browned (about 5-7 minutes).
  4. Pour in chicken broth; add diced tomatoes, green chilies, corn, cumin, oregano, and paprika. Stir well.
  5. Bring to a boil; reduce heat to low and cover. Simmer for 30 minutes until chicken is tender.
  6. Adjust seasoning as desired; simmer uncovered for an additional 5-10 minutes if thicker stew is preferred.
  7. Serve hot garnished with fresh cilantro and lime wedges.
