  • 2 pounds ground beef
  • 1 cup Arborio rice
  • 1 onion, finely chopped
  • 5-6 garlic cloves, grated
  • 2-3 tablespoons olive oil
  • 1 and 1/2 teaspoons salt or to taste
  • freshly cracked black pepper
  • 2 cups pureed canned or fresh tomatoes
  • 3-4 tablespoons balsamic vinegar
  • 2 cups onion broth
  • parsley for garnish
  • feta cheese
  • yogurt
  • 1/3 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried mint
  • 1 teaspoon dried dill

Instructions

  1. Prepare the onions by boiling them until softened. Reserve broth.
  2. Sauté chopped onion and garlic in olive oil, then add ground beef until browned.
  3. Mix in tomato puree, rice, and reserved onion broth; cook until liquid is absorbed.
  4. Stuff each onion layer with the filling and arrange them seam-side down in a baking pan.
  5. Combine sauce ingredients and pour over the onions before covering and baking.
  6. Bake at 400°F (200°C) for 45 minutes covered, then uncover and bake for an additional 35–45 minutes until caramelized.
