Ingredients
- 6-8 onions
- 2 pounds ground beef
- 1 cup Arborio rice
- 1 onion, finely chopped
- 5-6 garlic cloves, grated
- 2-3 tablespoons olive oil
- 1 and 1/2 teaspoons salt or to taste
- freshly cracked black pepper
- 2 cups pureed canned or fresh tomatoes
- 3-4 tablespoons balsamic vinegar
- 2 cups onion broth
- parsley for garnish
- feta cheese
- yogurt
- 1/3 cup finely chopped fresh parsley
- 1 teaspoon dried oregano
- 1/2 teaspoon dried mint
- 1 teaspoon dried dill
Instructions
- Prepare the onions by boiling them until softened. Reserve broth.
- Sauté chopped onion and garlic in olive oil, then add ground beef until browned.
- Mix in tomato puree, rice, and reserved onion broth; cook until liquid is absorbed.
- Stuff each onion layer with the filling and arrange them seam-side down in a baking pan.
- Combine sauce ingredients and pour over the onions before covering and baking.
- Bake at 400°F (200°C) for 45 minutes covered, then uncover and bake for an additional 35–45 minutes until caramelized.
