  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • Salt & black pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole milk or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini, fresh or refrigerated
  • ½ cup shredded mozzarella, for topping
  • 2 tbsp chopped parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Season steak with salt and pepper. Sear in a skillet with olive oil for 2–3 minutes per side, then set aside.
  2. In the same skillet, melt butter and cook minced garlic for 30 seconds. Stir in flour, then gradually whisk in milk and beef broth until smooth. Add cheddar cheese until melted.
  3. Cook tortellini according to package instructions but slightly undercook them. Toss with olive oil after draining.
  4. In a greased baking dish, combine tortellini, seared steak, and cheese sauce. Top with mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden brown.
