Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 4 cloves garlic, finely minced
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ¼ teaspoon paprika
- Salt and freshly ground black pepper to taste
- 12 ounces spaghetti
- 1 cup heavy cream
- ½ cup chicken broth
- 4 ounces cream cheese, softened
- 1 cup freshly grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- ½ teaspoon crushed red pepper flakes (optional)
- 2 tablespoons chopped fresh parsley
Instructions
- In a skillet over medium heat, add olive oil and 1 tablespoon of butter. Once heated, add the chicken pieces. Season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
- In the same skillet, add remaining butter. Add minced garlic and sauté for about 30 seconds until fragrant.
- Add heavy cream and chicken broth to the skillet. Stir well. Add cream cheese gradually while whisking until it melts completely.
- Lower heat and stir in Parmesan cheese until melted. If desired, include crushed red pepper flakes for a kick.
- Meanwhile, cook spaghetti according to package instructions in a separate pot. Drain when ready.
- Add cooked chicken and drained spaghetti to the sauce in the skillet. Toss gently until everything is well coated in the cheesy sauce.
- Garnish with shredded mozzarella cheese and chopped parsley before serving.
