  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 12 ounces spaghetti
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 4 ounces cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a skillet over medium heat, add olive oil and 1 tablespoon of butter. Once heated, add the chicken pieces. Season with salt and pepper. Cook until golden brown and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  2. In the same skillet, add remaining butter. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add heavy cream and chicken broth to the skillet. Stir well. Add cream cheese gradually while whisking until it melts completely.
  4. Lower heat and stir in Parmesan cheese until melted. If desired, include crushed red pepper flakes for a kick.
  5. Meanwhile, cook spaghetti according to package instructions in a separate pot. Drain when ready.
  6. Add cooked chicken and drained spaghetti to the sauce in the skillet. Toss gently until everything is well coated in the cheesy sauce.
  7. Garnish with shredded mozzarella cheese and chopped parsley before serving.
