Ingredients
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 4 pieces cod fillets (about 6 oz each)
- 4 medium-sized potatoes, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, toss diced potatoes with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast potatoes for about 20 minutes until golden brown.
- Meanwhile, melt butter in a small saucepan over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in chopped parsley and remove from heat.
- After 20 minutes, remove potatoes from oven and push them to one side of the baking sheet. Place cod fillets on the other side and brush generously with garlic butter sauce.
- Return to oven and bake for an additional 10-12 minutes until cod flakes easily with a fork.
- Serve hot, drizzled with remaining garlic butter sauce.
