  • 1 ½ lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • ¾ cup chicken broth
  • 1 ½ cups heavy cream
  • 1 ¼ cups shredded mozzarella cheese
  • 4 cloves garlic, finely minced
  • Salt and freshly cracked black pepper, to taste
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • 1 tbsp all-purpose flour

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add chicken pieces seasoned with salt, pepper, Italian seasoning, and garlic powder. Cook until golden brown and cooked through (about 6-8 minutes).
  3. Stir in butter and minced garlic into the skillet with chicken; sauté until fragrant.
  4. In another saucepan, melt remaining butter and whisk in flour until smooth. Gradually add chicken broth and heavy cream while whisking continuously until slightly thickened.
  5. Mix in shredded mozzarella until melted and creamy. Pour sauce over the cooked spaghetti and toss gently to combine.
  6. Serve hot, garnished with fresh herbs if desired.
