- 2 2/3 cups all-purpose flour
- 1 cup softened unsalted butter
- 2/3 cup sugar
- 1 large egg (room temperature)
- 1 tsp almond extract
- 3/4 tsp kosher salt
- Jam of your choice for filling
Instructions
- Preheat your oven to 375°F (190°C).
- Cream the butter and sugar together using a mixer until fluffy.
- Add the egg and almond extract; mix until well combined.
- In a separate bowl, whisk together flour and salt. Gradually mix into the wet ingredients until a dough forms.
- Roll dough into 1 oz balls and place them on a parchment-lined baking sheet about 2 inches apart.
- Flatten each ball slightly and use your thumb to create an indent for the jam filling.
- Fill each indent with about one teaspoon of jam, adding a small dot of dough in the center if desired.
- Chill the cookies in the fridge for 15-20 minutes before baking.
- Bake for approximately 15 minutes or until edges are lightly golden. Let cool before serving.
