  • 340 grams (3/4 pound) top sirloin, cut into cubes
  • Salt, to taste

  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped
  • 6 large potatoes, peeled
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons chives, finely chopped

Instructions

  1. Preheat your oven to 375°F (190°C). In a large skillet, heat olive oil and butter over medium-high heat. Season the beef with salt and black pepper before adding it to the hot pan. Sear until browned on all sides, which should take about 6–8 minutes.
  2. Add chopped onions and carrots to the skillet with the beef. Sauté while stirring occasionally until onions are translucent and carrots start softening, which takes about 4–5 minutes.
  3. Sprinkle flour over the beef and vegetables, stirring well to coat everything. Cook for 1–2 minutes. Pour in apple cider and beef broth while scraping up any browned bits from the pan. Bring this mixture to a boil.
  4. Transfer the mixture into an oven-safe Dutch oven or casserole dish. Cover tightly and place in your preheated oven. Bake until the beef is fork-tender and sauce thickens; expect this to take between 60–90 minutes.
  5. While the stew is braising, peel your potatoes and place them in a large pot covered with water. Bring it to a boil and cook until tender (approximately 20–25 minutes). Drain well before returning them to the pot.
  6. Mash your potatoes with milk, sour cream, shredded cheddar cheese, and chopped chives until smooth and creamy. Adjust seasoning with salt if needed.
  7. Spoon generous amounts of mashed potatoes onto plates before topping them with your apple cider beef stew. Feel free to garnish with extra chives for added flavor!
