  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 small sweet onion (finely diced)
  • 1 cup shredded carrots
  • 3 garlic cloves (minced)
  • 1 teaspoon fresh ginger (minced)
  • ¼ cup chicken broth
  • 1 small head cabbage (shredded)
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • 1 teaspoon toasted sesame oil

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook until nearly done (5-6 minutes).
  2. Push turkey aside; add onion and remaining olive oil. Cook for 3-4 minutes. Then stir in carrots, garlic, and ginger for another 2 minutes.
  3. Add chicken broth and shredded cabbage along with soy sauce, vinegar, salt, and pepper. Stir well, cover, and cook on medium-low for about 12-15 minutes until cabbage is tender.
  4. Remove from heat and mix in toasted sesame oil before serving.
