- 2.2 pounds fresh strawberries
- 3.5 cups granulated sugar
- 1 large lemon
Instructions
- Wash strawberries thoroughly, discard spoiled ones, and slice them into smaller pieces.
- In a jam cooking pot, combine strawberries, sugar, and the juice from the lemon halves.
- Set pot over medium heat, stirring occasionally until it reaches a rolling boil.
- Lower heat and simmer for about 30 minutes or until desired consistency is reached.
- Blend mixture with a hand blender until smooth.
- Check that it reaches 220°F (105°C) using a candy thermometer or by performing the plate test.
- Fill sterilized jars with hot jam and seal tightly.
- Turn jars upside down overnight to create a vacuum seal.
