Ingredients
- 8 medium bell peppers (any color)
- 2-3 small garlic cloves
- 3 tablespoons extra virgin olive oil
- 3-4 tablespoons organic cider vinegar
- â…™ teaspoon Celtic salt
- Optional: fresh parsley and maple syrup
Instructions
- Preheat the oven to 185°C (365°F). Wash the peppers and place them on a baking tray in a single layer.
- Roast the peppers for 30-35 minutes until tender. Remove from the oven and cover with a towel to sweat for 10-15 minutes.
- Once cooled, peel off the skins and slice the peppers into strips.
- In a bowl, mix olive oil, cider vinegar, minced garlic, salt, and optional parsley and maple syrup. Whisk until well combined.
- Arrange the roasted peppers on a serving plate and drizzle with vinaigrette. Serve immediately or let marinate for enhanced flavor.
