  • 8 medium bell peppers (any color)
  • 2-3 small garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 3-4 tablespoons organic cider vinegar

Instructions

  1. Preheat the oven to 185°C (365°F). Wash the peppers and place them on a baking tray in a single layer.
  2. Roast the peppers for 30-35 minutes until tender. Remove from the oven and cover with a towel to sweat for 10-15 minutes.
  3. Once cooled, peel off the skins and slice the peppers into strips.
  4. In a bowl, mix olive oil, cider vinegar, minced garlic, salt, and optional parsley and maple syrup. Whisk until well combined.
  5. Arrange the roasted peppers on a serving plate and drizzle with vinaigrette. Serve immediately or let marinate for enhanced flavor.
