- 1 box Strawberry Cake Mix
- 1 cup Guava Nectar or Juice
- 3 large Eggs
- 1/2 cup Liquid Coconut Oil
- 8 oz Cream Cheese
- 1 cup Granulated Sugar
- 8 oz Cool Whip
- Optional: Coconut Flakes for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the Strawberry Cake Mix, guava nectar, eggs, and coconut oil using an electric mixer until well combined (about 2 minutes).
- Pour the batter into a greased 9×13 inch baking pan and bake for approximately 26 minutes or until a toothpick comes out clean.
- Allow the cake to cool completely.
- For the cream cheese topping, beat together cream cheese, sugar, and vanilla extract until smooth, then fold in thawed Cool Whip.
- Spread the cream cheese topping over the cooled cake and sprinkle with optional coconut flakes.
