- 1 cup diced celery
- 1 diced Honeycrisp apple
- 1/4 cup chopped toasted walnuts
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Wash and dice the celery into small pieces and core and dice the Honeycrisp apple.
- Toast the chopped walnuts in a dry skillet over medium heat for about 3-5 minutes until golden brown.
- In a large mixing bowl, combine diced celery, diced apple, toasted walnuts, and dried cranberries.
- In a separate small bowl, whisk together olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad mixture and toss gently until well combined.
- Serve immediately as a refreshing side dish or on its own.
