- 12 oz penne pasta
- 1 lb chicken breast, cut into bite-size pieces
- 1 cup heavy cream
- 6 oz Velveeta cheese, cubed
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 5 cloves garlic, minced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 1/2 tsp Cajun seasoning
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp Italian seasoning
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a skillet over medium-high heat, melt butter and olive oil. Sauté minced garlic until fragrant, then add chicken with Cajun seasoning. Cook until golden and fully cooked. Transfer chicken to a plate.
- In the same skillet, melt remaining butter. Add heavy cream and milk; stir until warm. Mix in Velveeta until melted; then add mozzarella and Parmesan until thickened.
- Season the sauce with additional Cajun seasoning and other spices as desired. Toss cooked penne in the sauce and combine with chicken.
- Serve hot with optional toppings like extra cheese or parsley.
