  • 18 oz spaghetti
  • lbs boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 4½ tbsp unsalted butter
  • 67 cloves garlic
  • 2¼ tsp Cajun seasoning
  • ¾ tsp smoked paprika
  • ⅜ tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1½ cups heavy cream
  • ¾ cup chicken broth
  • 4½ oz Velveeta cheese
  • ¾ cup shredded mozzarella cheese
  • ¾ cup grated Parmesan cheese
  • 3 oz cream cheese
  • 1½ tsp Dijon mustard
  • 1½ tsp lemon juice
  • 1½ tbsp chopped parsley, for garnish

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning and spices. Sauté in olive oil and butter until golden brown; remove from skillet.
  3. In the same skillet, melt remaining butter, cook garlic briefly, then add chicken broth and heavy cream.
  4. Whisk in cheeses until smooth and creamy.
  5. Combine with cooked spaghetti and return chicken to the skillet; toss well.
  6. Garnish with parsley before serving.
