- ¾ cup butter (softened)
- ⅓ cup sugar
- ⅓ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cup flour
- 2 cups graham cracker crumbs
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
- 8 oz cream cheese (softened)
- 8 oz butter (softened)
- 2½ cups powdered sugar
- 1¼ cup brown sugar
- ½ cup whipping cream
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
- In another bowl, combine flour, salt, baking powder, and baking soda. Gradually add to the wet mixture and fold in 1½ cups of crushed graham cracker crumbs.
- Scoop dough using a cookie scoop, roll in remaining graham cracker crumbs, shape into balls, and flatten slightly on the baking sheet.
- Bake for 8–10 minutes until lightly golden around the edges. Allow to cool completely before frosting.
