- 2 cups flour

- 1 cup sugar
- 1 cup freshly grated zucchini (pressed to remove excess water)
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter
- 1/4 cup sugar (for cinnamon swirl)
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
- In a large bowl, whisk together flour, baking soda, baking powder, and salt.
- In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well mixed.
- Gradually add the dry ingredients to the wet mixture; stir until just combined.
- In a separate bowl, mix melted butter, sugar, and ground cinnamon for the swirl filling.
- Pour half of the batter into the loaf pan; drizzle with half of the cinnamon swirl mixture. Repeat layering with remaining batter and swirl.
- Bake for 45-55 minutes until a toothpick comes out clean.
- Allow to cool before glazing with powdered sugar mixed with milk.
