  • 1 cup sugar
  • 1 cup freshly grated zucchini (pressed to remove excess water)
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted butter
  • 1/4 cup sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5 inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well mixed.
  4. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  5. In a separate bowl, mix melted butter, sugar, and ground cinnamon for the swirl filling.
  6. Pour half of the batter into the loaf pan; drizzle with half of the cinnamon swirl mixture. Repeat layering with remaining batter and swirl.
  7. Bake for 45-55 minutes until a toothpick comes out clean.
  8. Allow to cool before glazing with powdered sugar mixed with milk.
