Ingredients
For the Bread
3 overripe bananas, mashed
4 tablespoons melted vegan butter
3/4 cup maple syrup
1 cup unsweetened almond or oat milk
1 teaspoon vanilla extract
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups regular or gluten-free all-purpose flour
1 cup old-fashioned rolled oats
For the Cinnamon Swirl
4 tablespoons melted vegan butter
1/3 cup light brown sugar
2 tablespoons cinnamon
For the Frosting
3/4 cup powdered sugar
2 tablespoons melted vegan butter
2 oz softened vegan cream cheese
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) and lightly grease a baking dish or loaf pan.
2. Prepare the Batter
In a large bowl, mix the mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
3. Add the Dry Ingredients
Stir in the baking powder, baking soda, cinnamon, salt, flour, and rolled oats. Mix until just combined.
4. Make the Cinnamon Swirl
In a small bowl, combine the melted vegan butter, brown sugar, and cinnamon until it forms a smooth mixture.
5. Assemble
Pour half of the batter into the prepared pan. Drizzle half of the cinnamon swirl mixture over it. Add the remaining batter and finish with the rest of the cinnamon swirl. Use a knife to gently swirl the mixture.
6. Bake
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
7. Make the Frosting
In a small bowl, whisk together powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth.
8. Finish and Serve
Allow the bread to cool slightly, then drizzle the frosting over the top before slicing and serving.
