Ingredients
- 1 (15 oz) can chickpeas (rinsed and drained)
- 2 cups chopped English cucumber
- 1 1/4 cups chopped Roma tomatoes
- 1/4 cup chopped red onion
- 3 Tbsp chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 2 Tbsp fresh lemon juice
- 1 1/2 tsp minced garlic
- 1 tsp Italian seasoning
- Salt and freshly ground black pepper
Instructions
- In a large mixing bowl, combine chickpeas, cucumber, tomatoes, red onion, and parsley. Stir gently to mix.
- In a liquid measuring cup, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad mixture and toss until evenly coated. Adjust seasoning if necessary.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
