- 125 g all-purpose flour
- 2 large eggs
- 300 ml whole milk
- 30 g unsalted butter (melted)
- 180 g cooked chicken (sliced)
- 100 g Gruyère cheese (grated)
- Fresh parsley (for garnish)
Instructions
- Prepare the batter: In a mixing bowl, whisk together flour and salt. Make a well in the center, add eggs, and gradually mix in milk until smooth. Stir in melted butter and let rest for 30 minutes.
- Cook the crêpes: Heat a nonstick skillet over medium heat and brush with melted butter. Pour about 60 ml of batter into the center, swirl to cover evenly, and cook for 1-2 minutes until edges lift. Flip and cook for another 30 seconds.
- Assemble: Place one crêpe on a plate, spread mustard if desired, layer with sliced chicken and grated Gruyère cheese. Fold into a triangle.
- Heat filled crêpes: Return to skillet over medium heat for 1-2 minutes per side until cheese melts.
