  • Total Time: 40 minutes
  • Yield: Serves 6

Ingredients

Scale
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (about 2 cups)
  • 1 teaspoon vegetarian Worcestershire sauce
  • 5 cups cauliflower slices (about 1 medium head)
  • 0.5 cup shredded Gruyère cheese
  • 0.75 teaspoon dried thyme
  • 0.5 teaspoon ground pepper (divided)
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt

Instructions

  1. Preheat your oven to 450°F (232°C) and prepare a large baking sheet with cooking spray.
  2. In a skillet over medium heat, heat 1 tablespoon of olive oil. Add sliced onions and cook for about 5 minutes until softened.
  3. Stir in the Worcestershire sauce, thyme, and ¼ teaspoon of ground pepper. Reduce heat to medium-low and cook until golden brown (10-15 minutes), adding water if necessary.
  4. Arrange cauliflower slices on the baking sheet. Combine remaining olive oil with garlic powder and salt; brush over each slice.
  5. Roast for about 10 minutes until tender, then add caramelized onions and Gruyère cheese on top. Return to oven for an additional 2-3 minutes until the cheese melts.
