Ingredients
- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1 large onion, thinly sliced
- 4 slices turkey bacon, chopped
- 2 tablespoons olive oil
- 1/2 cup dry apple vinegar (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, heat the broth over medium heat until warm.
- In a large skillet, cook the turkey bacon until crispy, about 5-7 minutes. Remove and drain on paper towels.
- In the same skillet, sauté onions in olive oil over medium-low heat for 20-25 minutes until caramelized.
- Toast Arborio rice in the skillet for 2-3 minutes.
- If using, add apple vinegar and stir until absorbed.
- Gradually add warm broth one ladle at a time, stirring frequently for about 18-20 minutes until creamy and al dente.
- Stir in caramelized onions, turkey bacon, butter, and Parmesan cheese. Adjust seasoning as needed.
- Serve hot with additional Parmesan and parsley as garnish.
