  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 1 cup buttermilk (or substitute with milk and lemon juice)
  • 2 1/4 cups very ripe mashed bananas (about 5 medium)

Instructions

  1. Preheat the oven to 300°F. Butter and line two 9×5-inch loaf pans with parchment paper.
  2. In a bowl, whisk together flour, salt, baking powder, and baking soda. If using nuts, mix them in now.
  3. In another bowl, cream together sugar and butter until light and fluffy. Add eggs one at a time, followed by the mashed bananas.
  4. Gradually add the dry ingredients to the wet mixture while alternating with buttermilk. Mix just until combined.
  5. Pour batter into prepared pans and bake for about 1 hour or until golden brown. Check doneness with a toothpick; it should come out clean.
