Instructions
- Melt unsalted butter over medium heat until foamy, then continue cooking until golden brown.
- Pour the browned butter into a heatproof bowl and let it cool for about 15 minutes.
- Grease a 9×13-inch baking pan with extra butter and line it with parchment paper.
- In the bowl with cooled butter, mix in both sugars until well combined, then add eggs one by one along with vanilla extract.
- In another bowl, whisk together flour, baking soda, and salt; gradually fold this into the wet mixture without overmixing.
- Gently incorporate chopped pistachios into the dough.
- Spread the mixture evenly in the prepared baking pan and sprinkle with reserved pistachios if desired.
- Bake at 350°F for 25-30 minutes until edges are golden but center is slightly underbaked.
- Allow cooling completely before cutting into bars.
