- 3 large sweet potatoes
- ½ cup cooked turkey bacon (crumbled)
- 6 large eggs
- ¼ cup shredded white cheddar cheese
- 2 tablespoons unsalted butter
- Salt
- Black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- Prick sweet potatoes multiple times with a fork and coat with canola oil and salt.
- Bake sweet potatoes for 60-90 minutes until fork-tender.
- Slice each potato in half lengthwise, scoop out the insides into a mixing bowl.
- Mix the scooped potato with turkey bacon, butter, and cheese.
- Spoon the filling back into the sweet potato skins.
- Create wells for raw eggs on top of the filling; season with salt and pepper.
- Bake again for 15-20 minutes until eggs are set.
