Ingredients

  • ½ cup cooked turkey bacon (crumbled)
  • 6 large eggs
  • ¼ cup shredded white cheddar cheese
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prick sweet potatoes multiple times with a fork and coat with canola oil and salt.
  3. Bake sweet potatoes for 60-90 minutes until fork-tender.
  4. Slice each potato in half lengthwise, scoop out the insides into a mixing bowl.
  5. Mix the scooped potato with turkey bacon, butter, and cheese.
  6. Spoon the filling back into the sweet potato skins.
  7. Create wells for raw eggs on top of the filling; season with salt and pepper.
  8. Bake again for 15-20 minutes until eggs are set.
