Ingredients
- 1/2 cup butter (softened)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe banana (about 2 and 1/2 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into a powder)
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: nuts, cinnamon, nutmeg, cloves
Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
- If adding nuts, toast them on a baking sheet in the oven for about 5–7 minutes until fragrant.
- In a large mixing bowl, cream softened butter with both sugars until fluffy. Incorporate eggs and vanilla until well combined.
- Mash ripe bananas and stir them into the butter mixture.
- Combine flour, oat flour, baking soda, baking powder, and salt in another bowl; add this dry mix to the wet ingredients without overmixing.
- Gently fold in sour cream and any optional spices or nuts.
- Pour batter into the prepared loaf pan and smooth out the top before baking for approximately 55–65 minutes or until a toothpick comes out clean.
- Allow to cool on a rack for about 20 minutes before slicing.
