  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: nuts, cinnamon, nutmeg, cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. If adding nuts, toast them on a baking sheet in the oven for about 5–7 minutes until fragrant.
  3. In a large mixing bowl, cream softened butter with both sugars until fluffy. Incorporate eggs and vanilla until well combined.
  4. Mash ripe bananas and stir them into the butter mixture.
  5. Combine flour, oat flour, baking soda, baking powder, and salt in another bowl; add this dry mix to the wet ingredients without overmixing.
  6. Gently fold in sour cream and any optional spices or nuts.
  7. Pour batter into the prepared loaf pan and smooth out the top before baking for approximately 55–65 minutes or until a toothpick comes out clean.
