Ingredients
- 2 medium sweet potatoes, peeled and chopped into 1/2" chunks
- 1 large yellow onion, chopped into 1 inch pieces
- 1 medium head broccoli, chopped into florets
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce, divided
- 2 Tablespoons olive oil
- 1/4 teaspoon salt, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder or chili powder
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and chop sweet potatoes into 1/2 inch chunks and onion into 1 inch pieces. Place on a parchment-lined baking sheet.
- Drizzle with olive oil, season with salt, garlic powder, and chipotle powder. Toss to coat evenly and roast for 20 minutes.
- Add chopped broccoli to the pan, drizzle with olive oil and salt, then place chicken breasts on top and brush with BBQ sauce. Bake for an additional 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Shred the cooked chicken using two forks and toss with remaining BBQ sauce.
- Assemble bowls by dividing chicken, veggies, and sweet potatoes among serving dishes.
