  • 2 medium sweet potatoes, peeled and chopped into 1/2" chunks
  • 1 large yellow onion, chopped into 1 inch pieces
  • 1 medium head broccoli, chopped into florets
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce, divided
  • 2 Tablespoons olive oil
  • 1/4 teaspoon salt, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2 inch chunks and onion into 1 inch pieces. Place on a parchment-lined baking sheet.
  3. Drizzle with olive oil, season with salt, garlic powder, and chipotle powder. Toss to coat evenly and roast for 20 minutes.
  4. Add chopped broccoli to the pan, drizzle with olive oil and salt, then place chicken breasts on top and brush with BBQ sauce. Bake for an additional 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
  5. Shred the cooked chicken using two forks and toss with remaining BBQ sauce.
  6. Assemble bowls by dividing chicken, veggies, and sweet potatoes among serving dishes.
