Ingredients
- 1 1/3 cups all-purpose flour
- ¾ teaspoon fine grain salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- 5 1/3 tablespoons unsalted butter
- 2/3 cup sugar
- 2 large eggs, lightly beaten
- 2 very ripe bananas, mashed
- ½ cup coarsely chopped walnuts
- 1 tablespoon fruit juice
Instructions
- Preheat the oven to 350°F (175°C). Butter a 9×5-inch loaf pan and set aside.
- In a medium bowl, whisk together flour, salt, baking soda, and baking powder.
- In a large bowl, cream the unsalted butter and sugar until light and fluffy. Gradually mix in the dry ingredients.
- Beat in the eggs and fold in mashed bananas and walnuts along with the fruit juice.
- Pour the batter into the prepared loaf pan and bake for about 50-60 minutes until a toothpick inserted comes out clean.
- Allow to cool in the pan for 5-10 minutes before transferring to a wire rack.
