  • ¾ teaspoon fine grain salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 5 1/3 tablespoons unsalted butter
  • 2/3 cup sugar
  • 2 large eggs, lightly beaten
  • 2 very ripe bananas, mashed
  • ½ cup coarsely chopped walnuts
  • 1 tablespoon fruit juice

Instructions

  1. Preheat the oven to 350°F (175°C). Butter a 9×5-inch loaf pan and set aside.
  2. In a medium bowl, whisk together flour, salt, baking soda, and baking powder.
  3. In a large bowl, cream the unsalted butter and sugar until light and fluffy. Gradually mix in the dry ingredients.
  4. Beat in the eggs and fold in mashed bananas and walnuts along with the fruit juice.
  5. Pour the batter into the prepared loaf pan and bake for about 50-60 minutes until a toothpick inserted comes out clean.
  6. Allow to cool in the pan for 5-10 minutes before transferring to a wire rack.
